One of the most important distinctions in chemistry is between physical and chemical changes. A physical change alters the state or appearance of a substance but does not produce a new substance. Acids and alkalis are two important families of chemicals. Acids have a sour taste (you must never taste them in the lab!) and turn blue litmus paper red. Common laboratory acids include hydrochloric acid (HCl), sulfuric acid (H₂SO₄), and nitric acid (HNO₃).
