When Sophie withdraws cash, her capital decreases because drawings reduce equity.

Expenses are costs incurred to earn the revenue. Here we have two important expenses: the cost of ingredients used (£200) — often called cost of sales — and the electricity bill (£100). Recognising both revenue and the matching expenses allows us to measure profit correctly.
